Dubai Winter Festival · December 2026
Dutch heritage. Freshly made. Shared with love.
Two cities. Two eras. One shared spirit.

1600s
Ships came and went, and with them spices, sugar and new ideas. It was a complicated age of trade, with its share of injustice, but in Amsterdam's kitchens it slowly shaped a gentle tradition of baking.

1800s
Bakers pressed leftover crumbs and syrup between two thin wafers. Nothing wasted, everything shared. The stroopwafel was born, and its name simply means syrup waffle.

2026

The iron hisses, the batter turns golden, and the wafer is split while it is still hot. Warm caramel syrup goes in, and as you take it in your hands the whole stand smells of butter, cinnamon and brown sugar. Next to it, the poffertjes pan is turning out little clouds, finished with butter and a soft snowfall of powdered sugar.

The Craft
The batter is mixed in small batches. Each wafer is pressed, cut while hot, and split by hand before the syrup goes in. Poffertjes are turned one by one with a fork. It is simple work, and it rewards patience.
Dough pressed on a hot iron until crisp and golden.
Each wafer is split while warm, by hand.
Warm caramel syrup, spread thin and even.
Served as it is, or dressed with your topping.

Our Heritage

Four centuries ago, Amsterdam was one of the great trading cities of the world. Its harbour linked distant cultures, and with them came spices, sugar and ingredients that slowly found their way into Dutch kitchens.
Out of that meeting of flavours grew a quiet tradition of baking craftsmanship. In time it gave us the stroopwafel: two delicate, thin waffle layers joined by warm syrup.
Today, Dubai carries a similar spirit of ambition and connection, a place where people and ideas from everywhere meet. It feels like the right home for a new chapter.
We tell this history with care: the age of trade brought exchange, and also hardship for many. We honour the craft, not the conquest.
